PUMPKIN SPICE BREAD PUDDING

I couldn’t resist making it. Too many posts about Irish pudding desserts and English pudding desserts got me hungry for some real nice and warm bread pudding, and thinking that we are in deep poverty over here if the best we can come up with is J E L L O Instant Pudding and call it good. No offense.

Fall is officially here, and after today in the 80’s, tonight we are going to have a nice little storm blow through and bring us some bonafide dry fall crisp air. My lungs are so ready for dry air and my heart is ready for Autumn. So, with that I decided to celebrate and make something pumpkin. I came up with this recipe by combining several others and it was more delicious than I ever thought it would be. So, now I’m hooked and my traditional pumpkin bread receipe has some fall competition.




Pre-heat oven to 350 degrees

Grease a 9x13 inch cake pan (or you can use a cupcake tin for individual ones)

For the Bread Pudding

in a large bowl add the following:

1 box of any brand spice cake mix

1/3 cup of water

1/3 cup of veg. oil

4 farm fresh eggs (or any kind you have)

2 tsp. cinnamon

1 tsp. allspice

1/2 tsp. clove (optional)

1 cup of pumpkin (either fresh or canned)

Beat until mixed well, about 2 minutes with electric mixer.

Spread into the cake pan and bake for abouT 25 to 30 minutes.

Check for doneness with a toothpick.

While the bread (cake) is cooking, mix the

Sauce recipe

In a med. saucepan, add

4 tablespoons butter,

1 ½ cups packed brown sugar

1 ¼ cups cream (I used half and half)

1/2 cup of crushed pecans

1 teaspoon cinnamon

½ teaspoon allspice

Bring to a soft boil and continue for 5 minutes, stirring as needed so it doesn’t stick.

Reduce heat if it begins to stick and just simmer.

Take off the heat and let it sit until the bread is done. When the bread is taken from the oven, spread the sauce over the top and serve warm.

For an extra treat, add a dollop of vanilla ice cream, cool whip or homemade whipped cream!
